BBQ Chicken with a Mustard Glaze and Sautéed Courgettes

A delicious meal for a Summer's evening; ideal with a crunchy side salad.

Ingredients
  • 7ml lemon juice
  • 6 skinless, bone-in chicken thighs
  • 1 onion, chopped
  • Cooking spray


Chicken rub:

  • 30g dark brown sugar
  • 1 garlic clove, crushed
  • 5g chilli flakes
  • 2.5g smoked paprika
  • A good pinch of salt


Sauce:

  • 75g ketchup
  • 15g dark brown sugar
  • 15ml sherry or red wine vinegar
  • 15g Dijon mustard

Method

  1. Firstly, combine the ingredients for the chicken rub in a bowl
  2. Put the sauce ingredients into a separate bowl and whisk well
  3. Coat the bowl with a little cooking spray, then press the SAUTÉ button
  4. Rub the spice mixture evenly over the chicken thighs then add the chicken and the chopped onion to the bowl
  5. Cook for approximately 10 minutes, then add the sauce making sure the chicken is coated and cook for another 10 minutes
