The spicy chorizo adds a generous hint of spicy flavour to this hearty onepot stew.
400g chorizo sausage, chopped small
40ml olive oil
2 red onions, finely diced
4 sticks celery, cut into approx. 1-2 cm piece
1 red chilli, finely diced
2x 400g tins chopped tomatoes
4 garlic cloves, finely chopped
60g tomato purée
6g cayenne pepper
200g brown lentils
6g smoked paprika
1 green chilli, finely diced
4 medium potatoes cut
3 carrots cut into approx. 1-2 cm pieces
850 ml chicken stock
Salt and cracked black pepper
Remove the bowl from the slow cooker, add the oil and heat. When hot Fry the chorizo for 2-3 minutes, add the onion, carrot, garlic, celery and chilli, fry for a further 5-6 minutes. Add all other ingredients and bring to the boil.
Once boiled add the lentils and place the bowl back into the base. Cook on the highest setting for approximately 3-4 hours.
