Courgette Spaghetti with Avocado, Pine Nuts, Bacon, Mozzarella and Basil

A quick and creamy alternative to a carb filled meal.

Ingredients
  • 2 large courgettes
  • 2 avocados
  • ½ onion
  • 20ml olive oil
  • 8 cherry tomatoes, halved
  • 3 rashers streaky bacon, cooked until crispy, cut into 2-3 cm pieces
  • 40g pine nuts, toasted
  • 2 bunches basil
  • ½ lemon, juice
  • 1 Buffalo mozzarella cheese ball

Method (Serves 4)

  1. Spiralize the courgette with the thick noodle blade. Spiralize the onion with the spiral slice blade.
  2. Peel the avocados and put them into a food processor. Add the basil leaves (save some to garnish later), lemon and season lightly, process until smooth.
  3. Heat the olive oil in a pan then add the onion and fry for 2-3 minutes without browning.
  4. Add the pine nuts followed by the courgette spaghetti and fry for 3-4 minutes without browning. Add the tomatoes and cook for a further 2-3 minutes.
  5. To serve, sprinkle the courgettes with the crispy bacon, spoon the avocado mix on and garnish with torn pieces of the mozzarella and some fresh basil leaves.
