Grilled Chicken Skewers & Sweet Potato Wedges

For the chicken: 

  •  Zest of 2 lemons, juice of 1
  • 2 cloves garlic, peeled and crushed
  • ½ tsp salt
  • 1 tsp olive oil
  • 250g chicken thigh fillet, diced into 2cm chunks
  • 6 spring onions, cut into 2cm lengths

For the wedges:

  • 250g sweet potatoes, cut into wedges
  • 1 clove garlic, lightly crushed
  • 1 sprigs rosemary, leaves chopped
  • 1 sprigs thyme, leaves chopped
  • Pinch chilli powder
  • 1 tsp olive oil
  • 1/2 tsp sea salt
  • Garlic mayonnaise for dipping

Method (Serves 2)

  1. HINT: A quick way of peeling garlic is to shake it inside two bowls
  2. Combine all of the lemon chicken ingredients except the spring onions in a large bowl, cover and refrigerate for 1 hour.
  3. Set the Purifry Health Fryer to 200°C.
  4. Meanwhile, combine all of the wedge ingredients in a large bowl and toss to coat.
  5. Tip into the basket, place inside the oven and cook for 30 mins
  6. Thread the chicken onto skewers, alternating with pieces of spring onion, 
  7. Shake the basket of wedges halfway through cooking and set the chicken into the rack.
  8. Cook the chicken for 10 minutes, turn the skewers over and cook for a further 5 minutes. When done, the juices should run clear.
  9. Remove the wedges after 30 mins. They should be browned and crispy.
  10. Serve with garlic mayonnaise and salad.
