Honey & Lime Chicken With Homemade Chips

For the Chicken:

  • 2 large skinless chicken breast fillets
  • 1 tbs honey
  • 1 tsp tomato puree
  • 1 lime, squeezed
  • 1 fresh chilli, finely chopped, or pinch dried crushed chillies
  • 1 large clove garlic, crushed
  • 2 spring onions, finely sliced
  • 2 tsp light olive oil or vegetable oil
  • 1 tbs fresh parsley, chopped
  • Freshly ground black pepper
  • Pinch of salt

For the Chips:

  • 3 large potatoes, peeled
  • 2 tsp light olive oil or
  • vegetable oil
  • ½ tsp paprika
  • ½ tsp dried oregano
  • Freshly ground black pepper
  • Sea salt


  1. Slice each chicken breast lengthways into about 6 pieces
  2. In a large bowl, combine the honey with the tomato puree and mix well to make a paste
  3. Add all the other ingredients and mix well. Add the chicken pieces to the marinade and stir to ensure all the meat is coated
  4. Set aside for 20-30 minutes
  5. Pre-heat the Purifry to 180˚C for 5 minutes
  6. In a large bowl mix together the oil, paprika and oregano
  7. Season with a generous grind of black pepper and sea salt
  8. Cut the potatoes lengthways into slices about 8-10mm wide, then cut the slices into chips
  9. Add the chips to the seasoned oil and stir well to coat
  10. Add the chips to one half of the basket and place the chicken pieces in the other. Set the timer to cook for 10 minutes
  11. Turn the chicken pieces and the chips and cook for a further 15-20 minutes until the chips are crispy and the chicken is golden brown and cooked through
