Italian Style Beef Stew

Ingredients
  • 1kg braising steak, cut into chunks
  • Sea salt and black pepper
  • Olive oil or vegetable oil
  • 2 onions, peeled and sliced
  • 2 cloves garlic, crushed
  • 2 sprigs rosemary, leaves chopped
  • 250ml red wine
  • 2 tbsp tomato puree
  • 400g tin of chopped tomatoes
  • 150g roasted red peppers, cut into strips
  • 100g pitted black olives
  • 500ml beef stock

Method (Serves 4-6)

  1. Season the beef
  2. Heat a little oil in the bottom of the Multicooker. Fry the meat in batches until golden brown.
  3. Set the beef aside.
  4. Add a little more oil to the pan and fry the onions for 5-6 minutes until softened and starting to caramelise.
  5. Add the garlic and rosemary and cook for a further two minutes.
  6. Add the wine, simmer for 2-3 minutes
  7. return the beef to the pan with the remaining ingredients and simmer for 2 hours until the beef is tender and the sauce has thickened.
  8. You can keep your stew bubbling away until you’re ready to eat with the fantastic keep warm function
  9. Serve with potatoes or polenta and green vegetables.
