Lemon & Herb Crusted Cod

Vamp up your white fish dish and create this zesty, flavoursome Lemon & Herb Crusted Cod. It’s the perfect main course for all occasions.

  • 4 skinless cod fillets, 150g each
  • 3 slices crusty white bread
  • 1 bunch of tarragon
  • 1 bunch of chives
  • 1 bunch of basil
  • 1 tbsp olive oil
  • Zest of 1 lemon
  • Sea salt and black pepper
  • Crusty white bread

Method (Serves 4)

    1. Pre heat the oven to 200 degrees C
    2. Tear the bread into small chunks and place into chopper attachment
    3. Using speed setting 4, blitz to a crumb
    4. Add the tarragon and parsley, then blitz using speed setting 3 to mix
    5. Add the zest of one lemon, 1 tbsp of olive oil and a dash of salt and pepper, use on speed setting 3 to chop 
    6. Drizzle a little olive oil into an oven proof dish and lay the cod fillets on top
    7. Spoon the breadcrumb mixture over the fish and press down gently to form a crust 
    8. Place onto the top shelf of the oven for 10-12 minutes, or until the fish is cooked through
