Marinated Grilled Salmon & Veg

A healthy meal the whole family will enjoy.

  • 2 skinless salmon fillets, 150g each
  • 2 cloves garlic, peeled and crushed
  • 1 tbsp olive oil
  • Zest of 1 lemon
  • 1 red pepper, deseeded and quartered
  • 1 red onion, peeled and cut into wedges
  • 1 bunch asparagus, trimmed
  • 1 lemon, cut into wedges
  • Salad leaves

Method (Serves 2)

  1. Place the salmon fillets in a bowl and grate over the zest of 1 lemon, 2 cloves of peeled garlic, add 1 tbsp olive oil and season
  2. Thoroughly coat the salmon fillets in the marinade
  3. Drizzle remaining oil over the chopped vegetables and season
  4. Once the grill has heated to temperature, lay on the salmon and vegetables and close
  5. Grill for 8-10 minutes or until the salmon is cooked through. Check the food as you go
  6. Serve the salmon and grilled vegetables with a simple green salad and a lemon wedge
