Pasta With Avocado Sauce

Ingredients

  • 300g penne pasta
  • 8-10 cherry tomatoes, halved
  • ½ bunch fresh basil leaves plus extra leaves to serve
  • 2 large ripe avocados, peeled and stone removed
  • 1 clove garlic, chopped
  • Juice of 1 lemon
  • 100 ml olive oil
  • Salt and pepper to taste
  • Grated parmesan to serve

Preparation time: 5-10 minutes

Equipment: Russell Hobbs Jug Blender

  1. In a large pot of boiling salted water, cook pasta according to package instructions; drain well
  2. To make the avocado sauce, add the avocados, basil, garlic, lemon juice and seasoning to the jug blender jug and blend
  3. Whilst blending on low, add the olive oil until well combined with the avocado. Set aside
  4. In a large bowl, combine pasta, avocado sauce and cherry tomatoes. Top with grated parmesan and basil leaves then serve immediately
