Pork & Pineapple Curry

Curry just got tropical! A great contender for a midweek meal.

Ingredients
  • 250g lean pork (cut into cubes)
  • 12.5g flour
  • 2.5g salt
  • 15ml cooking oil
  • 1/2 large onion, chopped
  • 7.5g curry powder
  • 7.5g paprika pepper
  • 150ml chicken stock
  • 1/2 dried red chilli
  • 7.5g mango chutney
  • 2.5ml Worcestershire sauce
  • 112.5g tinned pineapple cubes + juice
  • 1 bay leaf

Method

  1. Toss the pork in the flour and salt
  2. Press the SAUTÉ button and heat the oil in the bowl
  3. Brown the meat, then lift out on to a plate with a draining spoon
  4. Sauté the onions until soft
  5. Stir in the curry powder and paprika pepper
  6. Fry for 2 minutes then return meat to the bowl
  7. Stir well and cook for a few minutes
  8. Press the KEEP WARM/CANCEL button, then press the PASTA button
  9. Bring to the boil, then press the KEEP WARM/CANCEL button
  10. Press the SLOW COOK button and cook for 8 hours
  11. Remove bay leaves before serving
