Quick Carbonara

This Quick Carbonara makes a tasty dinner which can be whipped up in a matter of minutes using cupboard essential ingredients.

  • 360g spaghetti
  • 200g Pancetta or bacon
  • 2 whole eggs and 1 yolk
  • 80g grated Parmigiano or Pecorino Cheese
  • Olive oil
  • Salt & Pepper
  • Fresh parsley to garnish


  1. Bring a large pan of water to boil ensuring there is enough to cover the pasta generously then add a tablespoon of coarse salt
  2. Add the pasta to the pan ensuring you don’t break it. If the pasta is too big for the pan, let the pasta immerse naturally, as it cooks it will sink and fit the pan. Please refer to packing for timings
  3. Whilst the pasta is cooking grate your cheese using your Food Processor with the grater attachment
  4. When the pasta is nearly ready shallow fry the diced pancetta in a non-stick frying pan for a couple of minutes
  5. Drain the pasta and place in the frying pan along with the pancetta, add a little glug of olive oil and mix well
  6. Off the heat prepare a large serving bowl and lightly whisk two full eggs and one yolk with a pinch of salt and the grated cheese
  7. Pour the pasta and pancetta into the bowl and give it a quick mix before serving. Ensure you do this off the heat otherwise the egg may curdle
  8. Season to taste with freshly ground black pepper and garnish with fresh parsley

Top Tip: You can grate a whole block of cheese in your Food Processor in minutes and simply store in the fridge for another time.
