Salmon Teriyaki Stir Fry

An explosion of flavours combined with contrasting textures that complement each other perfectly!

Ingredients
  • 60ml teriyaki sauce
  • 1 lime (zest and juice)
  • 5g dark muscovado sugar
  • 15g wasabi paste
  • 250g salmon fillets
  • 3.5ml toasted sesame oil
  • 1 pak choi, sliced
  • 1 carrot, thinly sliced
  • 1 red onion thinly sliced
  • 1 sweet red pepper, thinly sliced
  • A handful of fresh beansprouts
  • 30ml soy sauce, plus extra to serve
  • 2 portions of cooked basmati rice
  • Handful of fresh coriander, chopped

Method

  1. Firstly create a marinade by mixing the teriyaki sauce, lime zest, 5g of wasabi paste and the sugar in a bowl
  2. Coat the salmon fillets, and leave for 10 minutes
  3. Press the SAUTÉ button
  4. Add the oil, drain the salmon and place that in the bowl skin down and cook for a couple of minutes
  5. Turn and cook for another minute or so
  6. Toss the stir fry vegetables in the remaining marinade
  7. When the salmon is cooked, take it out of the bowl and leave to one side
  8. Add the stir fried vegetables and the remaining marinade to the pot and sauté for 3 – 5 minutes
  9. For the rice mix, add the remaining wasabi, the lime juice soy sauce and the coriander and fold into the hot rice
  10. Serve with the stir fry and the salmon
