Three Bean Chilli

Come home to a warming bowl of this filling and meat free soup.

Ingredients
  • 30ml vegetable oil
  • 2 red onions, finely diced
  • 2 cloves garlic, finely chopped
  • 1 red chilli, finely chopped
  • 1x 400g tin red kidney beans, drained, rinsed and dried on paper
  • 1x 400g tin cannellini beans, drained, rinsed and dried on paper
  • 1x 400g tin black eyed beans, drained, rinsed and dried on paper
  • 9g chilli powder
  • 5g oregano
  • ¼ bunch parsley
  • 3g ground coriander
  • 6g cumin
  • 40g tomato purée
  • 350g vegetable stock
  • Salt and pepper to taste

Method

  1. Add all ingredients to the slow cooker bowl and cook on high for 6-8 hours.
