Arborio Rice Pudding

Treat yourself all year round with this hearty dessert!

Ingredients
  • 125g Arborio rice
  • 50g butter
  • 200ml double cream
  • 450ml whole milk
  • 70g dark muscovado sugar
  • 30g mascarpone cheese
  • 4g ground nutmeg

Method

  1. Put the rice in the bowl and press the RICE button, stirring occasionally
  2. When the programme ends, the rice should be slightly toasted 
  3. Add the butter, select the RICE programme again and cook for 3-4 minutes, stirring occasionally
  4. Press the KEEP WARM/CANCEL button
  5. Pour in the cream, milk and dark muscovado sugar and select the RISOTTO programme. The rice will take about 15–20 minutes to soften
  6. You want the end result to have a liquid texture so cancel the programme by pressing the KEEP WARM/CANCEL button before the programme has finished
  7. Stir in the mascarpone and the grated nutmeg
