Cheesecake with Berry Sauce

Make a deliciously creamy and fruity cheesecake using the Allure 3 in 1 Hand Blender from Russell Hobbs to create the entire dessert!

Ingredients
  • 150g digestive biscuits
  • 75g melted unsalted butter
  • 750g soft cheese
  • 1 vanilla pod, split
  • Zest of 1 lemon, juice of half
  • 175g icing sugar, sifted
  • 300ml sour cream

Method (Serves 8)

  1. Blitz the biscuits using a chopper attachment until they resemble breadcrumbs. Then add the melted butter and blitz again to form a biscuit mix
  2. Add the biscuit mix to a spring base tin. Smooth out and pat down using a spoon
  3. Chill the biscuit base in the fridge for 1 hour
  4. Use a whisk attachment to mix the soft cheese until it has softened
  5. Add the vanilla seeds, lemon zest, lemon juice, sour cream and 150g icing sugar into the soft cheese mixture. Whisk again and fold until the mixture is smooth
  6. Pour the topping over the chilled base and chill for another 2 hours
  7. Place the berries and remaining icing sugar into a beaker and blitz with the blade on the mixing leg attachment
  8. Cover the beaker with a lid and leave in the fridge to chill for an hour
  9. Turn the cheesecake out and cut into slices. Serve with the berry sauce
