Hazelnut Meringues

Impress your guests by creating these heavenly Hazelnut Meringues using the Russell Hobbs Illumina Hand Mixer. Top with raspberry sauce and watch their mouths water.

  • 2 egg whites
  • 110g golden caster sugar
  • 50g chopped roasted hazelnuts


  1. Pre heat the oven to 110 degrees C
  2. Separate two egg whites, and add to a bowl with a pinch of salt
  3. Set to speed 3, and whisk the egg whites to stiff peaks
  4. Gradually whisk in the sugar until the mixture is stiff and glossy
  5. Gently fold in the hazelnuts
  6. Line a baking sheet with greaseproof paper and spoon the mixture into four equal mounds, then flatten slightly with the back of a spoon
  7. Bake in the oven for approximately an hour and a half, or until the meringues are firm
  8. Transfer the meringues to a rack to cool down
  9. Serve with lashings of raspberry sauce
