Mango and Lime Cheesecake

Try a piece of our delicious mango and lime cheesecake!

  • 150g digestive biscuits
  • 75g unsalted butter, melted
  • 750g soft cheese
  • 1 vanilla pod, split
  • Zest of 1 lime, juice of half
  • 150g icing sugar, sifted
  • 200ml sour cream

For the topping:

  • 2 mangoes, peeled and diced
  • 1 tbsp icing sugar
  • Juice of 1 lime


  1. Using a food processor or chopping attachment, blitz the biscuits to a crumb
  2. Add the melted butter and pulse to bring together
  3. Press the mixture into the bottom of a 23cm springform tin, lined with greaseproof paper
  4. Transfer to the fridge for 1 hour to set
  5. Tip the soft cheese into a large bowl and use a whisk attachment to mix until softened
  6. Add the vanilla seeds, lime zest and juice then whisk until smooth
  7. Finally, add the icing sugar and sour cream and fold together using a spatula
  8. Pour over the chilled base then chill for 2 hours until firm
  9. Using the hand blender (blade attachment), blitz a quarter of the chopped mango together with the remaining icing sugar and lime juice until smooth
  10. Pour the mango purée over the remaining mango, toss to coat and then add to top of cheescake
  11. Return to the fridge to chill for an hour, or until needed
