Syrup Sponge Pudding

A quintessential British tradition of moist sponge and a sweet sauce!

Ingredients
  • 115g Butter
  • 100g Caster sugar
  • 2 Eggs, beaten
  • 1/4 tsp Vanilla essence
  • 175g SR flour
  • 2 tbsp. Milk
  • 4 tbsp. Golden syrup

Method

  1. Grease a two pint oven-proof bowl or pudding basin
  2. In large bowl, cream together the butter and sugar. Add, a little at a time, the beaten eggs, vanilla and flour, until well mixed. Fold in milk to achieve a smooth consistency
  3. Pour the syrup into the bottom of prepared basin and layer the mixture over the top
  4. Cover the basin with baking parchment and then with foil and tie with string to secure it
  5. Place in your multi cooker (make sure there is room all around the bowl)
  6. Add boiling water to the multi cooker, about an inch lower than the lip of the bowl. Select the Steam programmefor 1 to 1 1/2 hours, or until pudding springs back when touched.
  7. Invert onto serving plate and serve warm
