Coconut, Mango & Chili Edamame Bean Salad

Bursting with colour and flavour, this oriental salad is crunchy, creamy and best of all sitting on a bed of super healthy edamame beans.

Ingredients
  • Coconut cubes
  • 1 mango
  • 1 red chili, sliced
  • 1 avocado
  • Handful of cashew nuts
  • 2 carrots
  • 100g edamame beans
  1. Use the Russell Hobbs spiralizer to create carrot ribbons.
  2. Peel and chop the mango into cubes.
  3. Peel and slice the avocado into pieces.
  4. Arrange all ingredients on the plate and top with a mango, chilli and lime dressing.
