Courgetti Halloumi Salad

Whisk your taste buds away to the Mediterranean with this healthy, vibrant salad infused with mouthwatering flavours.

Ingredients
  • 1 large courgette
  • 1 red pepper
  • 1 tablespoon of olive oil
  • Zest of 1 lemon
  • A squeeze of lemon
  • Handful of basil leaves roughly torn
  • 1 block of halloumi cheese
  1. Cut the courgette in half and place one half into the Russell Hobbs spiralizer, using the large noddle attachment. Repeat with the second half of the courgette.
  2. Take the spirals of courgette and place onto a plate.
  3. Slice 1 red pepper and place the slices on top of the courgette.
  4. Cut the halloumi into slices roughly 10mm thick.
  5. Grill the halloumi for about 5 minutes or until the cheese turns a golden colour with visible grill marks.
  6. Place the halloumi on top of the courgette and red pepper.
  7. Mix together olive oil, lemon zest and basil and drizzle over the salad.
