Beetroot, Goat’s Cheese, Walnut and Apple Salad

This sweet vegetarian salad is sure to impress at any party.

Ingredients
  • 5 beetroots
  • 120g walnuts, roasted and lightly crushed
  • 2 gala apples, peeled, cored
  • 250g soft goat’s cheese
  • 20ml olive oil
  • ½ lemon, juice and zest
  • Salt and pepper to taste

Method (Serves 5-6)

  1. Spiralize the beetroot with the thin noodle blade then cut the strands into approx. 3-4 cm pieces. Spiralize the apple with the spiral slice blade then cut the ribbons into approx. 1-2cm pieces.
  2. Mix with the remaining ingredients being careful not to break the goat’s cheese up too much.
