Crushed Olive Oil Potatoes

Add a modern twist to your potatoes with this delicious recipe.

Ingredients
  • 200g new potatoes
  • 2 shallots, finely diced
  • 30ml olive oil
  • ½ bunch chives
  • Salt and pepper to taste

Method

  1. Steam the potatoes for approx. 15-20 minutes until they start to be soft. Once the potatoes are cooked remove them from the steamer and leave to cool.
  2. Heat the oil in a pan then add the shallots and cook for 2-3 minutes (without browning them). Add the potatoes and crush with a fork. Don’t crush them too much. Season, then stir in the chives.
