Mixed Vegetable Cous-Cous

Ingredients

  • 1 red pepper, deseeded and cut into pieces
  • 1 yellow pepper, deseeded and cut into pieces
  • 1 courgette, sliced
  • 1 white onion, peeled and cut into pieces
  • ½ red chilli, deseeded and finely chopped
  • 80ml olive oil
  • 200g cous-cous
  • 1 tsp paprika
  • ½ lemon, juice
  • ½ bunch fresh chives, chopped
  • ½ bunch fresh parsley, chopped
  • Salt and pepper to taste

Method:

  1. Pre heat an oven to 180ºC. Mix the peppers, courgette, onion, chilli, seasoning and 60ml of the olive oil in a bowl.  Transfer to a baking tray and cook in the oven for 6-8 minutes until soft.  Remove and set aside to cool.
  2. In the meantime, add the couscous to a heat proof bowl and add the remaining olive oil. Pour over 300ml of boiling water, cover the bowl with cling film and set aside for 8-10 minutes until fluffy and all water has been absorbed.
  3. Break up the couscous with a folk and mix in the cooked vegetables, herbs, paprika, lemon juice, seasoning and some more olive oil to taste.
