Pesto and Couscous Salad

Ingredients
  • 125g cous cous
  • 5g stock powder
  • 250ml boiled water
  • 17ml olive oil
  • Juice of 1 lemon
  • 34g good quality pesto
  • ¼ cucumber
  • 50g feta cheese
  • 1 large handful of rocket leaves
  • 100g sun blushed tomatoes
  • 25 pine nuts
  • 1 yellow pepper finely diced

Method (Serves 4)

  1. Place the couscous in a heat proof bowl and sprinkle with the stock powder
  2. Boil 250ml water

  3. Pour the boiled water into the bowl with the couscous and stock powder
  4. Cover the bowl with cling film and leave for 5 minutes
  5. After 5 minutes use a fork to fluff the grains then stir in the olive oil, lemon juice and pesto
  6. Stir in the salad ingredients
  7. Season with salt and pepper and serve
