- 1 block haloumi
- 2 tbsp olive oil
- 1 tomato, sliced
- Green pesto
- Lettuce leaves
- Mixed pepper slices
- Salt and pepper to taste

- Heat the oil in a pan and fry the haloumi for 1-2 minutes until browned on both sides.
- Place the pittas in the toaster and toast.
- Cut the pittas open and fill with the haloumi, salad and pesto.
