  • 1/2 small aubergine, sliced 
  • 25g butter
  • 1/2 green pepper, deseeded and diced 
  • 1/2 onion, chopped
  • 1/2 red pepper, deseeded and diced
  • 1/2 clove garlic, crushed 
  • 200g can chopped tomatoes 
  • 1 courgette, sliced
  • Salt and pepper to taste

  1. Slice the aubergine and sprinkle with salt
  2. Leave for half an hour, rinse and pat dry
  3. Press the SAUTÉ button and melt the butter in the bowl
  4. Fry the onion and garlic until transparent
  5. Mix in the remaining ingredients and cook for a further 2 minutes, stirring
  6. Press the KEEP WARM/CANCEL button
  7. Press the SLOW COOK button and cook for 8 hours
