Stuffed Mackerel

This simple, healthy option is a winner for impressing dinner party guests.

Ingredients
  • 1 tomato, skinned, deseeded, and chopped
  • 1 mackerel fillet
  • 1/4 cooking apple, peeled, cored and chopped
  • 5ml lemon juice
  • 1/4 slice of bread, crumbled
  • Chopped parsley to taste

Method

  1. Lay the mackerel out, skin side down, season and sprinkle with lemon juice
  2. Mix the other ingredients and spread thickly over the mackerel
  3. Roll up from head to tail, and secure with a cocktail stick or thread
  4. Butter baking parchment in the bottom of the cooking pot and put the parchment in the cooking pot and the fish on the parchment
  5. Press the SLOW COOK button and cook for 3-4 hours
