Sunshine Roasted Potatoes

These potatoes take centre stage in any roast dinner!

Ingredients
  • 900g small red potatoes
  • 30ml olive oil
  • 1 red onion
  • 10 black olives, stoned
  • 30g toasted pine nuts
  • 3 cloves of garlic
  • 15g freshly chopped rosemary
  • 125ml dry vermouth or dry martini
  • 30g fresh basil (finely chopped for garnish)
  • Salt and pepper to taste

Method

  1. Press the SAUTÉ button and toast the pine nuts
  2. In the meantime, scrub the potatoes and cut them into cubes (leave the skin on)
  3. Crush the garlic cloves, then thinly slice the onion and olives
  4. When the pine nuts are slightly toasted, add the oil and place the potatoes and onions into the pot along with the garlic, rosemary and seasoning
  5. Sauté for 15 minutes
  6. When the potatoes have softened add the vermouth (or dry martini) and the olives and allow to mix well for another 10 minutes or so
  7. When ready, garnish with freshly chopped basil leaves and serve
