White Bean Pesto Dip

White Bean Pesto Dip

Serve with pitta bread or raw vegetables for a quick and easy snack.

Ingredients
  • 1 x 400g can white beans, rinsed and drained
  • 1 clove of garlic, crushed
  • ½ tsp ground coriander
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Zest of 1 lemon
  • 2 tbs lemon juice
  • 1 tbs olive oil
  • ½ cup fresh parsley

Method

  1. Add all the ingredients to the container and pulse twice to combine.
  2. Blend for 10 seconds. 
  3. Pour the dip onto a serving dish, drizzle with extra oil and serve with fresh crusty bread.
