Gazpacho soup

Learn how to make a mouthwatering Gazpacho soup using the Desire Jug Blender from Russell Hobbs!

Ingredients
  • 34ml extra virgin olive oil
  • 17ml sherry vinegar
  • 500g ripe plum tomatoes
  • Handful of ice cubes
  • 1 small red onion
  • ½ cucumber
  • 2 roasted red peppers
  • 1 clove of garlic
  • 1 red chilli
  • Fresh basil leaves
  • Pinch of caster sugar
  • Sea salt
  • Black pepper

Method (Serves 4) 

  1. Prepare the vegetables by chopping them roughly
    Top Tip: Deseed the chilli to reduce the heat
  2. Blitz until smooth using the Russell Hobbs Desire Jug Blender
  3. Add the sherry vinegar, olive oil and basil leaves
  4. Season to taste with salt & pepper. Then blitz again
  5. Add a handful of ice cubes
  6. Transfer to the fridge to chill for 1-2 hours
  7. Serve into bowls and drizzle with a little extra virgin olive oil
