Hearty Minestrone Soup

Hearty Minestrone Soup

A satisfying bowl of this flavoursome soup will keep you going throughout the day.

Ingredients
  • 12.5g butter
  • 1/4 clove garlic, crushed 
  • 1/2 leek, sliced
  • 1/2 small carrot, chopped
  • 1/2 medium potato, chopped 
  • 1/2 small onion, chopped
  • 1/2 celery stick, thinly sliced
  • 25g cabbage, finely shredded
  • 100g canned tomatoes including the juice 
  • 150ml chicken stock 
  • 1 bay leaf
  • Bouquet garni 
  • 12.5g thin cut macaroni
  • Salt and pepper to taste

Method 

  1. Press the SAUTÉ button and heat the butter in the bowl 
  2. Add the garlic, leek, carrot, potato, onion and celery and sauté until the butter is absorbed
  3. Add the other ingredients, except the macaroni
  4. Press the KEEP WARM/CANCEL button
  5. Press the PASTA button and bring to the boil
  6. Press the KEEP WARM/ CANCEL button and then press the SLOW COOK button-cook for 8 hours
  7. 45 minutes before serving, remove the bay leaf and bouquet garni and add the macaroni
  8. Adjust seasoning and serve with grated parmesan
