Moroccan Vegetable Soup

A chunky soup with a Moroccan twist.

Ingredients
  • 1 red onion, peeled and chopped
  • 1 red pepper, deseeded and chopped
  • 1 green pepper, deseeded and chopped
  • 1 leek, washed and chopped
  • 1 stick celery, chopped
  • 2 cloves garlic, peeled and chopped
  • 400g tin chopped tomatoes
  • 1 tbsp tomato purée
  • 1 tsp ras el hanout spice blend
  • 1 vegetable stock cube
  • 250ml water
  • Salt and pepper

Method (Serves 4)

  • Put all of the ingredients into the jug, add 250ml water and press the chunky soup button
