Spicy Butternut Squash Soup

Add a kick to your dish, and create a delicious spicy butternut squash soup using the Russell Hobbs Illumina Jug Blender.

  • Olive oil
  • 1 butternut squash, peeled and diced
  • 2 carrots, peeled and diced
  • 2 sticks celery, diced
  • 2 potatoes, peeled and cubed
  • 1 onion, peeled and chopped
  • 2 springs rosemary, leaves only
  • 3 cloves garlic, peeled
  • 2 bay leaves
  • 1 red chilli
  • 1 tsp smoked paprika
  • 1 tsp cumin seeds
  • 1 tsp chilli flakes
  • 1 litre chicken stock


    1. Prepare your vegetables and then Heat 2 tbsp of olive oil in a large saucepan
    2. Add the chopped butternut squash, carrots, celery and onion and sauté for two minutes
    3. Add the 3 cloves of crushed garlic, half a chilli, two bay leaves, a sprig of rosemary, and pinches of paprika and cumin seeds
    4. And a pinch of salt, and two pints of any type of stock
    5. Reduce the heat, and simmer for 45 minutes
    6. Remove the bay leaves and then transfer the soup to the Illumina Jug Blender
    7. Change the speed setting to Speed 3, as indicated by the Illumina light ring turning green
    8. Blend the soup until it has a smooth, lump-free consistency
    9. Serve with a topping of Crème fraiche and pumpkin seeds
