Tomato, Red Pepper and Basil Soup

You can't go wrong with this simple and tasty soup.

Ingredients
  • 6 tomatoes, diced
  • 200g roasted red peppers (from a jar)
  • 2 cloves garlic, peeled and crushed
  • 1 tbsp tomato purée
  • Pinch sugar
  • Pinch salt and pepper
  • Water
  • 1 vegetable stock cube
  • Small bunch basil, leaves only

Method (Serves 4)

  1. Put all of the ingredients into the jug except the basil.
  2. Add water to the SOUP MAX mark and press the creamy soup button.
  3. Add the basil 5 minutes before the end of cooking (20 minutes after pressing creamy soup button).
